Tasting Notes:
Our estate vineyard, Dunn Forest Vineyard, was a pioneer in Oregon’s first plantings of the Dijon Clone Chardonnay, ideal in our cool climate. Hints of citrus balance the toasty notes of apple pie and a touch of creaminess in the finish. Excellent alone as an excuse to brighten your day it also pairs well with cream-based dishes or herbed grilled chicken.

Winemaking Notes:
The fruit was gently de-stemmed directly into the press to minimize skin contact. Pressing decisions were done by taste and the press was stopped at just one bar of pressure to minimize the potential development of phenolics. After five days of settling, the juice was racked off its lees and a portion was sent to barrel, the remainder was left to ferment in stainless steel. We inoculated the barrels with eleven yeasts, two barrels of each, to increase complexity and inoculated the tank with another yeast specially recommended for stainless steel fermentations. After primary fermentation, the barrels were then inoculated for malo-lactic (ML). During ML, the barrels were stirred twice a week to increase mouthfeel and roundness. After ML, the wine was racked to tank and combined with the stainless portion of the wine. In July 2017 the wine was cross flow filtered, force carbonated and bottled.

Harvest Notes:
2016 might have been our earliest spring ever. Bud break occurred around March 20th, a full 10 days earlier than 2015. A warm growing season without excessive heat lead to an early harvest with a minimum of issues, something every farmer hopes for. An early harvest meant we were not dodging fall rains and could let the fruit hang on the vine until sugar, acid and flavors came into balance, something every winemaker hopes for.

Our winery and our estate vineyard, Dunn Forest, are LIVE Certified Sustainable and Salmon Safe. The vineyard is hand cultivated allowing us to respond to individual vine needs.
